People treat Hormel as a national grocery brand that always lived in a tin of Spam.
The first company was a pork house in a rented creamery.
In November 1891 George A. Hormel opened Geo. A. Hormel and Company on the Cedar River in northeast Austin, Minnesota, after dissolving his share in the Friedrich and Hormel meat market.
He had arrived as a hide buyer, borrowed $500 in 1887 dollars, and spent four years cutting meat at the retail counter.
The creamery let him slaughter and pack on the outskirts instead of buying dressed sides from Chicago.
That was the mechanism: buy hogs from nearby farms, skip the terminal stockyard, and sell quality rather than volume against Armour and Swift.
The firm incorporated in 1901, the year Hormel hung up the cleaver and opened a Minneapolis sales branch.
Spam, a canned pork shoulder mixed with ham, arrived in 1937 and later fed Allied rations.
The legal name became Hormel Foods only in 1993.
Headquarters never left Austin.
The public door today is 1 Hormel Place, with the Spam Museum at 101 Third Avenue Northeast standing in for the vanished creamery.
